Indonesian Chicken Curry (Ayam Bumbu Rujak)

this is how I like it ..

If you know and like  RENDANG, you may like Ayam Bumbu Rujak (In our language, Ayam means Chicken) as well. 

Ingredients
500 Grams chicken, cut into pieces
100 ml water
50 Ml coconut milk
10 Red peppers (or due to your taste)
6 Shallots
1 Garlic clove
1 Cm turmeric root
1 Cm ginger root
1 Lime leaf
1 Lemon grass, smashed
1 Cm blue ginger / galanga / galanga / lengkuas, smashed
1 bay leaf
Salt to taste
Brown sugar to taste
1/4 Teaspoon shrimp paste
Cooking oil to saute 

Directions
1. Red peppers, shallots, garlic, turmeric and ginger, blended
2. Saute the blended ingredients in cooking oil until aromatic.
3. Add chicken, stir-fry.
4. Add water, coconut milk, lime leaf, lemon gras, blue ginger, bay leaf, shrimp paste, stir frequently untill the chicken tender.
5. Add brown sugar and salt. Stir fry untill the gravy almost dry or dry up.


spicy and hot ..




Serve hot with rice or if you love the barbeque taste and smoky flavour, you can do grilling right after the gravy dry up. If you do not have an outdoor grill you can do on stove top grill pan.
